Here is a great budget friendly recipe that I make at least once a week. It is filling, healthy, & delicious! If you love pasta, vegetables and a little spice, then you will definitely be a fan of this creation! This recipe is the perfect mix of carbohydrates and healthy fats! Spaghetti Mix Up
*Whole grain spaghetti (or gluten-free if necessary)
*Frozen broccoli& cauliflower
*Crushed Red Pepper
*Dice up fresh tomatoes, mince garlic (1/2 clove or so), and slice black olives in halves (I use a quarter of a can). Put aside mixture in a separate bowl.
*Cook spaghetti according to instructions on the box. Steam broccoli and other desired mixed vegetables while spaghetti is cooking.
*Drain spaghetti and vegetables. Pour a tablespoon or 2 of Olive Oil and mix into the pasta and vegetables (more or less depending on your preference). Next add sliced up fresh tomatoes, black olives, and garlic and mix with other ingredients. Add 1/4 teaspoon of crushed red pepper to the mixture and 1/4 tsp of seasoning (I use Trader Joe’s 21 Seasoning Salute).
*Serve pasta topped with fresh cilantro and parsley
