Budget Friendly Recipe of the Week: Protein Packed Fruit Smoothie

Protein packed smoothie recipe

A smoothie bought at one of the chain smoothie shops (Jamba Juice, Planet Smoothie) often comes at a high price. Unfortunately, the high price does not necessarily mean quality ingredients. You can make your own customizable smoothie at home using organic fruit and high quality protein, and still spend much less money.

I used to make my smoothies using Greek yogurt, however, since transitioning to a vegan diet, I decided to try coconut milk. You can also use rice or almond (I try to avoid soy, but you can use this too if you like). Take a look at my protein packed smoothie recipe below.

1 cup of So Delicious Organic Vanilla Coconut Milk (or regular yogurt)

1/2 cup of yogurt (I use So Delicious plain)

1 cup of water

1 cup of frozen organic mixed berries (I prefer to use the mixed berry medley from Trader Joe’s but feel free to use whatever you like).

1 tablespoon of chia seeds (found at any health food store)

1 scoop of Plant Fusion protein powder (available at Whole Foods and other health food stores)

*Feel free to adjust the water and milk levels to your desired consistency

*If you don’t like fruit, substitute a tablespoon of cocoa powder. This makes for a delicious milkshake like taste.

This smoothie recipe is so delicious! As an added bonus, it is much cheaper & healthier than getting a smoothie out. Sure the ingredients cost a bit upfront, but you can keep making smoothies all week long.

This recipe is packed with healthy ingredients: plenty of plant protein from the powder, omega’s from the chia seeds, and antioxidants from the fruit.  The coconut milk provides the perfect base for a creamy delicious treat. The coconut milk substitution makes it a great alternative to those going dairy free. The Plantfusion powder is easy to digest (no stomach problems like whey protein).

Works great post-workout recovery snack or as a mid morning pick up!
